How to make vegan yogurt from cashews

Vegan cashew yogurt is a delicious and perhaps new recipe for most. Cooking a creamy and light cashew "yogurt" will only take a few minutes (if you pre-prepared cashews, of course), and a nutritious breakfast is ready. You can take it with you to study or work.

This recipe is perfect for lunch and for evening tea with friends. Put it in small glasses, decorate it with berries and see how many people can guess that this yogurt is vegan!




Ingredients (2 servings):

  • 1.5 cups of raw cashew nuts, soak overnight (8-12 hours)
  • 2 tablespoons of lemon juice
  • 10 tsp. water
  • 2 fresh soft dates (or soaked dried, boneless dates)
  • 1 pinch of sea salt
  • 1/2 teaspoon of Indian plantain powder * see note
  • + 1/2 cup / 120 ml of water


Preparation:

Mix the plantain powder with water in a small bowl and stir until it thickens. Place the soaked cashew nuts in a blender (or in a bowl use a submersible hand blender).

Add lemon juice, water, dates and sea salt, beat until you get a homogeneous mass. Pour into a bowl and add 2 tablespoons of plantain powder, stir. Pour in two glasses and put in the refrigerator for 10 minutes. Serve with muesli and fresh fruit.

*Note:In this recipe, plantain seed powder is the main highlight, giving yogurt a delicate creamy texture, it works as a thickener. You may not use this powder, but the yogurt is completely different. Powder from plantain seeds is available, it is a good source of fiber, contributes to the good work of the intestine.
