Asian plum sauce



Perfect, in principle, to any food: fried chicken to, duck, pork, vegetable roll and so on

Preparation time: 120 minutes
Servings: 6

You will need:

1 medium-sized onion
15 grams of fresh ginger
1-2 cloves of garlic (to taste)
1 small chili
800 grams of red plums (pitted, cut into quarters)
150 ml rice vinegar (white wine vinegar)
100 ml of water (Chinese rice wine or sherry)
80-100 g brown sugar
6-5- tbsp soy sauce (to taste)
1/3 cinnamon sticks (1/3 tsp ground)

How to cook:

1 finely chopped onion, garlic and chili. Put all the ingredients except soy sauce and sugar in a saucepan with a thick bottom, add water and put on fire. After boiling, reduce the heat and, stirring occasionally, let simmer for 15 minutes, until soft consistency plums.

2. Put plums in a colander (large sieve) and wipe with a spoon.

3. Pour the resulting plum puree back into the saucepan, add sugar, soy sauce, cinnamon and put on a plate. Boil, reduce the heat and uncovered, stirring occasionally, let simmer for 1 to 1 1/4 hours, until the sauce thickens. Remove the spices and pour the sauce over the sterilized jars. Cover tightly and completely cool. Store in a cool place (4 months). The refrigerator is kept in the open state for 3 weeks.
