We will need:
1 cup grated on medium or coarse grater apples (one large apple)
1 cup cottage cheese
3/4 cup flour
1.5-2 tablespoons honey
1 tsp lemon juice
0.5 tsp cinnamon
pinch of salt
vegetable oil for frying.
Divide whites with the yolks.
In a large bowl, combine apples, cheese, egg yolks, flour, honey, cinnamon, lemon juice and a pinch of salt.
In a small bowl, beat whites into dense foam.
Carefully introduce proteins into a dough, and mix well with a spoon.
Spread a tablespoon of pancakes on a preheated pan with vegetable oil, and fry until golden brown on both sides.
Ready pancakes generously watered maple syrup and enjoy all this mess!
