In the XVII century, the delicacy was actively used in French cuisine to decorate exquisite desserts. After that, I decided: like a French cook, I will prepare this sweet for the winter!

The ingredients
  • 1 kg of sugar
  • 300 ml of water
  • 0.5 tsp citric acid
  • 1kg apricots


Preparation
  1. For drying candies from apricots, you need to choose moderately ripe fruits with strong and healthy flesh. From green fruits, the delicacy will not taste good. Overripe fruits will be boiled in the cooking process. Wash the apricots, cut them in half and remove the bones.



  2. Pour water into the pan and add citric acid and sugar. Let the syrup boil for 5 minutes, and then add half the apricots. Note that during the cooking process, the syrup should become transparent.



  3. Boil the apricots in the syrup for 15 minutes. Let the apricots cool in the syrup.



  4. Put the apricots on a pan covered with parchment paper. Sushi apricots in the oven at 50 degrees for 2 hours.



  5. Put the apricots on a net or trays. It is better that the place where the candied fruit will dry was on the balcony on the sunny side. To prevent dust from gathering on candied fruit and to protect against flies and wasps, it is worth covering trays or a grid with glass. Sushi kuragu within 2 days. From time to time, halves of the fruit must be turned over. The drier and windier the weather, the faster the fruit is dried at home. Ready candy from apricots do not stick to the hands, but remain elastic.
