Homemade apricot ice cream recipe

The ingredients
  • 250ml cream
  • 350g apricots
  • 50g powdered sugar


Preparation
  1. Wash the apricots and remove the bones.



  2. In a small pot with a little water, blanche the apricots over a slow heat. Or you can bake apricots: cloak the bowl with foil and lay apricots on it along with mint leaves or a cinnamon stick. Bake apricots in an oven heated to 200 degrees for 15 minutes.



  3. Meanwhile, whip the cream with a mixer to persistent peaks.



  4. Gradually add powdered sugar to the cream and whip, then increase the rate of whipping with the mixer. To make the cream better whipped (by the way, it is best for ice cream cream of 33% fat), put the wreaths of the mixer in the freezer for a few minutes before whipping.



  5. Rub the blanched apricots through a sieve to make the apricot puree, let it cool. You can also grind apricots with a blender.



  6. Mix the whipped cream with the apricot puree and send it to the freezer for an hour. If you want a more tangible fruity taste, you can add 2 tbsp of peach syrup to the ice cream.



  7. After an hour, stir the ice cream well and put it in the freezer again. If you make ice cream in a container, you will have to repeat this procedure 5 times every hour. Well, if you have ice cream molds, spread the ice cream into the molds, insert sticks into them and send them to the freezer for 3 hours.





As a result, apricot ice cream of a pleasant pastel color is obtained. But in addition to apricots, in the season of berries and fruits you can use anything: kiwi, raspberries, strawberries, currants. How not to enjoy such a simple dessert on hot days?
