It's time to bake French apricot pie, the best delicacy in midsummer

This summer, I discovered a real culinary miracle, and that's -- sandcake with apricots, raspberries and almonds. The recipe was looked at by my favorite culinary master, Tatiana Shpilko, for which she is very grateful.

Sand cake with apricots Ingredients for dough
  • 240g flour
  • 1 egg
  • 0.5 tsp baking powder
  • 60g sugar
  • 120g butter
  • pinch


Almond cream ingredients
  • 60g roasted almonds (or almond flour)
  • 60g sugar
  • 1 egg
  • 60g butter
  • 1 tsp vanilla extract


Filling ingredients
  • 400g apricots
  • 0.5 tbsp raspberries
  • 2 tbsp almond petals


Preparation
  1. For cooking. sand-dough Mix sifted flour with baking powder. In a separate container, mix pieces of softened butter with sugar and a pinch of salt. Please note that sugar does not dissolve completely.



  2. Add the egg and keep whipping, then add the baking powder flour into two approaches. Stir first with the mixer and then with your hands. Put the dough in a lump. It should be soft and not sticky dough. Before rolling, you can cool the dough in the refrigerator for 15 minutes.



  3. Roll the dough into a layer (about 0.5 mm thick) and lay out in a baking mould, form sides (about 3 cm). Cut the dough in random places with a fork. Put it in the fridge for half an hour. You can prepare such dough in advance and store it in the refrigerator or freezer.



  4. For cooking. Francispan cream (almond cream) in the bowl of the blender send almonds with sugar and beat everything to crumbness. Add soft butter, egg and vanilla extract. Strike it to uniformity.



  5. Wash the apricots, cut them in slices, remove the bones. Put 2/3 of almond cream on the sand dough, evenly leveling it over the entire surface of the form, lay out slices of apricots on the cream. Grease the apricots with residual cream. Put raspberries between the slices of apricots.



  6. Bake in a preheated to 180 degrees oven for 45 minutes. 5-7 minutes before ready sprinkle the cake with almond petals or crushed almonds.



  7. Before you cut the cake, cool it. Bon appetit!
