Delicious zucchini pancakes

Useful and fast meal for every day. Surprise your loved ones with original zucchini pancakes. They can be both a main dish and a side dish. Double the recipe if you want to make a serving of more than 2 people.



Ingredients (per 2 persons):

  • 1 large or 2 medium grated zucchini
  • 1 tsp salt
  • 2 pieces of shallots or 3 pieces of red onions, chopped
  • 1 chopped clove of garlic
  • 3 tbsp sliced fresh dill
  • 1/2 grated lemon peel
  • 1 tsp salt
  • 1/4 cup flour
  • 1 large egg whipped with a fork
  • 1 tbsp olive oil
  • 1/4 cup feta cheese
  • salt


Topping:

  • 1/2 cup of plain Greek yogurt
  • 1 tbsp honey
  • 1/2 tsp grated lemon peel
  • 1 lemon juice
  • 2 tbsp chopped fresh dill
  • salt
  • pepper
Make topping in advance and keep in the fridge until needed.

Preparation:

Grate the zucchini, put it on a paper towel. Sprinkle 1/2 tsp of salt.

After 5-10 minutes, squeeze the hands of the zucchini to get rid of excess fluid.

Cut the onions, garlic and dill.

In a bowl, mix zucchini, crushed vegetables, flour, olive oil, whipped egg, salt and pepper.

Then add feta, stir.

Heat the pan by adding a little olive oil. Pour the dough on the pan roast the pancakes to a golden color.

As a side dish, use dill, sliced onions and roasted pepper slices. When served, add yogurt sauce on top.

Such pancakes can be an excellent side dish for fish or chicken, cooked on the grill. And yogurt sauce can be used in making green salads.
