Avocado with a spicy salad of quinoa

This delicious vegetarian recipe is our new favorite alternative to the usual grilled vegetables.





Avocados on the grill:

  • 3 avocados
  • 1 to 2 tablespoons olive oil
  • Juice of 2 lemons
  • Salt and pepper to taste
For spicy bean salad and quinoa

  • 1 Cup dry quinoa
  • 3 tablespoons olive oil
  • 2 tablespoons Apple cider vinegar
  • 2 teaspoons of honey
  • 2 teaspoons Dijon mustard
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • Black pepper, to taste
  • 1 Cup sliced cucumbers
  • 1 Cup diced sweet red pepper (or tomatoes)
  • 1/2 Cup grains of raw corn(about 1 cob )
  • 1 1/2 cups cooked black beans
  • From 10 to 15листьев Basilica
  • 1/4 Cup chopped fresh cilantro




Lightly oil the grill and set on medium heat.

Rinse quinoa through a fine sieve for about a minute. Place in a medium-size pot with 2 cups water and a pinch of salt. Bring the water to a boil, then reduce heat. Cover and cook for 15 minutes. Let stand for 10 minutes under the lid.

Cut the avocado in half and remove the pits. Avocado lightly drizzle with olive oil and lemon juice, season with salt and pepper. Place avocado, cut side down on the grill for 5 minutes and set aside.

In a small bowl, whisk together olive oil, vinegar, honey, mustard, cumin, salt and pepper to taste.

In a large bowl, combine cooked quinoa, cucumber, pepper, corn, black beans, Basil, cilantro. Season the salad and mix gently. Season to taste.

Fill each half avocado salad. Serve, if desired, garnish with additional cilantro. published
