Creamy raw tomato soup with cashews

        




Ingredients (2 small servings):

3 large tomatoes, cut into 4 pieces
½ Cup cashew, pre-soaked for 20 minutes
½ Clove of garlic
½ Medium sweet Apple, cut into a few pieces (you can peel if the Apple is organic and a high-speed blender)
1 tbsp olive oil
½ Tbsp nutritional yeast flakes (nutritional yeast flakes) (optional, but tasty)
1/3 tsp dry Italian herbs (optional, especially if using fresh Basil)
pink salt (do not spare :)) and black pepper to taste
¾ – 1 Cup warm (or hot) water
parsley (or other greens) for decoration and aroma

Mix all ingredients except parsley in a blender, first on low and then on high speed to give the soup a creamy texture. Serve immediately as a separate light meal, or add brown rice, quinoa or couscous and greens (e.g., spinach or Basil) for a more nutritious option. Enjoy!
