Cream soup of pumpkin with orange
1 kg. pumpkin (raw), or 700 gr. purified
3 potatoes
1 onion
1 orange
1/2 liter of broth
1 tbsp butter and 1 tbsp vegetable oil
METHOD OF PREPARATION:
In a pot heat two kinds of oil and put chopped onion. Fried not too hard.
Add the pumpkin cubes and potato. Fry lightly and then pour the broth and simmer over low heat until tender. Beat with a blender and boil a little more. Remove from the heat.
Squeeze the juice of one orange and pour into pan.
When serving, garnish with zest and pumpkin seeds.
