Light dinner: salad with avocado and chicken, marinated in yogurt and spices

Salads are a wonderful light meal, especially in the heat. And if they still complement the portion of protein, like delicious low calorie chicken breast, you get a full dinner.

Today we offer you this option: salad with avocado and chicken, marinated in yogurt and spices. Preparation takes 20 minutes, if the chicken breast to marinate in advance – for example, in the morning.

Ingredients /for 2 persons/
Chicken in yogurt and spices
  • 2 chicken Breasts
  • 100 g of the yoghurt without additives and sugar
  • 2 tablespoons lemon juice
  • 1 clove garlic, finely chopped
  • bunch fresh cilantro, finely chopped
  • pinch of hot pepper
  • 1 teaspoon ground dry cumin, coriander or garam masala
  • ½ Teaspoon salt
  • ¼ Teaspoon black pepper
  • 1 avocado
  • 1 tomato
  • 1 small cucumber
  • 3 radishes
  • a couple of sprigs of mint
  • a couple of sprigs of parsley
  • 1 shallot or small red onion, finely chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
Chicken in yogurt and speciesa 1. Prepare the marinade: combine the yogurt, lemon juice, garlic, cilantro, spices, salt and pepper.

Step 2. Marinate the chicken in the package for the products for at least 3 hours and up to 8 hours. Make sure the marinade is evenly coated the meat and, if necessary, turn the package in the process of marinating.

Step 3. Preheat the oven to 200 degrees. Put the chicken in a baking dish, DAB with a paper towel and bake for 20-25 minutes. The finished chicken rest 5-10 minutes before slicing.

Salad from avocadoes 1. Prepare the filling: mix onion, lemon juice, olive oil, a pinch of salt and pepper.

Step 2. Slice the tomato, cucumber and avocado into cubes the same size. Radish cut into thin plates.

Step 3. Finely chop the herbs and gently mix with vegetables. Pour over the dressing and serve immediately.published
