You'll be amazed! Karyn Calabris is a raw fooder and is 66 years old.
In these photos, she is 61 and 65 years old. Caryn has her own raw food restaurant, Karyn's Fresh Corner, in Chicago, and her looks are her main advertisement. She's been eating raw for over 25 years. But beauty for her is not the main thing, mother and grandmother Karin did not live to 61 years. Therefore, health was her main motivation for switching to raw food. Now she teaches classes on cleansing the body and regularly starves. After the success of the raw food restaurant, she opened a regular vegan restaurant.
Please describe your restaurants and menus.
Raw restaurant was my first experience with restaurants. Our restaurant has been around for the longest time in the country and I am very proud of that.
Education is a big part of what I do. I believe people should be taught healthy eating. So both of my restaurants are vegan, meaning they don't have meat, fish, chicken or dairy.
Nothing gets hot in a damp restaurant. We don't even have a stove in the kitchen, just dryers. I believe, and I've been told, we have the most extensive raw menu in the country. I have a restaurant with expensive dishes like turnip ravioli with macadamia cheese, peppers with rice, pancakes and other complicated dishes... We have raw ice cream, which is just not from this world – no soy, no dairy products.
When people think of raw food, they think of salad, tomatoes and cucumbers. It's boring. I've been a raw foodist for over 25 years, and I know I would never be able to support that on tomatoes, cucumbers, and lettuce. I'm obsessed with food. I love life. I like colors. I love taste and texture. I'm very proud of my menu. I'm going to change it soon. I will add pizza with sausage, of course it will not be a real sausage – it will be raw. We just added a cheeseburger. I love to eat, so I cook deliciously.
I opened a non-raw food restaurant a year and a half ago for my husband and for Chicago. I was criticized at first, especially by raw foodists – “Why do you open a cooked food restaurant, you have to be a raw food eater, etc.” But the reality is that very few people will go from McDonald's to raw food, you need a bridge. Besides, I wanted my husband to eat better and my grandchildren, and they were not ready for a raw diet. It's all the dishes I cooked at home for them, and people would say, "Oh my God, it's like real ribs, real chili." And I decided Chicago needed it, and I gave it out into the universe.
How did you first learn about veganism?
I wasn’t really going to be vegan. I was a very sick person. I had every allergy known to mankind, terrible skin. Everyone in my family was sick and dying. My mother taught me to drink carrot juice. And I started drinking carrot juice. I got more energy and started going to the bathroom more often, and I used to be one of those people who went to the bathroom once a week. I thought, “Wow!” and started drinking more. And I bought a Phoenix juicer and drank a lot of juice. And one day I was making chicken soup, I put the chicken down, and I forgot when I turned it off, and the bones popped up. I looked at it and thought, "What are you doing?" It was like a divine discovery, however it may sound.
You stop for a minute and it's so barbaric. When I see trucks [with animals], I pray that they will find peace, because I know they are being driven to torture and that they are not well. They're no different than my dog. I can't even yell at my dog. My dog has never been yelled at. He was never beaten. He doesn’t even know that something bad could happen to him. He's a creature of God, he's my love. And every cow, pig and horse. I don't like horse sleds in my neighborhood. I think, God, if I could release you, I would, because I feel guilty. It breaks my heart what we do to the animals we share the planet with.
Do you feel restricted by veganism or raw food?
No, I actually think we have more choices. It makes you more creative, because the people on the meat potatoes get stuck. They eat the same thing: hamburgers. They eat the same thing over and over again. I am changing the menu because I am bored. So I have to be creative again. It makes you more alive, more creative. There's nothing I can't cook raw or vegan. There's nothing I can't cook. I don’t have to try food, I dream about food. I can think about it and know what it will taste like and cook it. I can go to a restaurant with my husband and see what he eats and come home and cook the same thing in the vegan world. I just have talent. Some people can sing without music lessons, and I can do that with food. So I'm never limited. Never.
What are your favorite dishes at the restaurant?
I love cale chips, I love pizza, ravioli, and new hummus. It's my favorite.
What do you want people to know about your business?
That's my point. It's my heart. It's my gift to myself and the world. This is my life. I love what I do. I love the impact I have on people. I think I’m changing things in the world and that’s important to me. I'm not a guru or special. I have been given a lot of truth and have the opportunity to help people find the same.
