Maghreb mousse of eggplant

With eggplant preparing a range of hearty dishes, often occupying the first place at the dining table.

INGREDIENTS:

  • 4 large eggplant
  • 2-3 cloves of garlic
  • 5 tablespoons thick mayonnaise (homemade)
  • salt, pepper
  • 5 tbsp olive oil


RECIPE PREPARATION: 1. Bake in the oven until soft at 200 °C eggplant, often pinned with a fork or knife, about 30 minutes. Cut in half, vyskrebencev pulp, cool.

2. Peel and grate on a fine grater garlic, mix with mayonnaise, salt and pepper.

3. Whisk the eggplant with garlic mayonnaise in a blender until smooth. Continuing to whisk, add the olive oil to get a fluffy mass.





4. Serve with toasted pita bread.
