The recipe for the world's hearty eggplant

How to marinate eggplant Ingredients
  • 5-6 eggplant
  • 10 teeth. Garlic.
  • 2 tables of water
  • 100-150 ml of 9% vinegar
  • 5 bay leaves
  • 8 black pepper peas
  • 4 peas of sweet pepper
  • 4 inflorescences of cloves
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 tbsp thick honey
  • 1 tbsp vegetable oil






Preparation
  1. Pour 0.5 liters of water into a pan, then add everything to the list: vinegar, bay leaf, black and fragrant pepper, cloves, salt, sugar, honey and vegetable oil. Bring the brine to a boil and leave it to cool.



  2. Now prepare the eggplant. They must not be overripe. Clean them of the skin and cut with plates about 8-10 millimeters thick. To avoid the bitterness that is often present in eggplant, sprinkle salt on each plate and leave for 20 minutes.
  3. While the brine cools and the bitterness of the eggplant goes away, keep preparing the ingredients. Take 2 heads of garlic, peel it and cut it with thin plates. Garlic will be needed for marinade. Remove the eggplant from the leaked liquid and you can fry them to a golden crust. Then leave them to cool down.


  4. When the eggplant cools, put them in a storage container. Like in the photo: take one plate of eggplant, dip in brine and put in a tray. It is necessary to lay eggplants for pickling tighter. Put the first row, put 2-3 slices of sliced garlic on each piece. Put some more eggplants on top and garlic again. Put this way all eggplant and prepared garlic. If desired, garlic can be added less.


  5. At the end of the pile of eggplant with the remaining brine. Eggplant should swim in brine, but even better. Put the eggplant tray in the fridge.


By prescription, they will be ready in 3-5 days. But you can start eating earlier. The taste will be different, of course. After the first day it will become more saturated, on the third day the pieces will be marinated stronger. But until the fifth day, our eggplant does not deserve, everything is eaten for a sweet soul.
