Baked zucchini with potatoes
Ingredients:
Courgettes 675 g
Potatoes 450g
Red bell pepper 1 piece
3 cloves garlic
Onion 1 clove
Chopped parsley 3 tablespoons
Olive oil 150 ml
Tomatoes 450 g
Oregano 1 teaspoon
Salt to taste
Freshly ground black pepper to taste
How to:
1. Preheat oven to 190 degrees.
2. In a baking dish, mix sliced zucchini, sliced potatoes, thinly sliced peppers, parsley, finely chopped garlic, chopped onion half rings, salt, black pepper, olive oil and chopped tomatoes. Smooth top and sprinkle with oregano.
3. Put in the oven for 1, 5 hours and bake, stirring occasionally.
Serve with fat sour cream.
