Balkan cake with cheese and apples

  • 550g wheat flour
  • 500g cottage cheese
  • 4 apples
  • 2 eggs
  • 1 tbsp sugar
  • 150 ml of water
  • 200g poppy
  • 1 tbsp cinnamon
  • 5 tbsp sour cream
  • 50ml cognac
  • 150g walnuts
  • 0.5 lemons
  • 80g butter
  • 3 tbsp cream
  • 100 ml of milk
  • 2 tbsp sunflower oil
  • 1 tbsp raisins
  • 1 tsp vanillin
  • 1 tsp salt


Preparation
  1. To prepare a fresh dough, which is interspersed with layers of filling, mix in a bowl of 300 g of sifted flour, a pinch of salt, water and sunflower oil. Mix elastic dough, wrap with food film and set aside for 1 hour at room temperature.



  2. There will be another dough in the cake - sand dough. To prepare it, sift 250 g of flour into a bowl, add butter sliced with cubes and rub it with your hands into a small homogeneous crumb. Add cream, 1 egg, 1 tsp of sugar and a pinch of salt. Mix the dough, form a dense ball from it, wrap it in a food film or bag and put it in the refrigerator.



  3. Get the cheese stuffing ready. Pour boiling water raisins for 5 minutes, water drain, then pour it with cognac for half an hour. Grind the cottage cheese through a sieve or grind in a blender, add 1 egg, 6 tbsp of sugar, 3 tbsp of sour cream, vanillin and pre-cooked raisins. Stir thoroughly and put in the fridge.



  4. Prepare the poppy stuffing. In a blender grind poppy, pour it with hot milk, add 100g of sugar and 0.5 tbsp of cinnamon. Stir carefully and put it aside.



  5. Prepare the apple stuffing. Peel the apples off the peel and rub them on a large grater. Take half the lemon peel and squeeze the juice. Mix grated apples with peel, lemon juice, remaining cinnamon and 2 tbsp of sugar.



  6. For nut filling, dry the nuts in a dry pan for 10 minutes, stirring. Grind in a blender along with 4 tbsp of sugar.



  7. Start picking the pie. For the best result, take a round shape with a diameter of 25 cm, lubricate it with sunflower oil. Roll out the sand dough as thinly as possible, lay it in a shape so that it completely covers it from the bottom to the very top of the sides. Push the layer with a fork all over the surface.



  8. From fresh dough, sculpt a sausage and divide it into 8 equal parts. From each, form balls, which then roll as thinly as possible into almost transparent sheets according to the size of the shape.
  9. Lubricate the dough in the form of melted butter and put in it half the filling of poppy. Cover with a sheet of fresh dough, then lay out half the curd filling, on it - another sheet of fresh dough. Lubricate it with butter and distribute half the nut filling, half the apple filling on it, which again cover with fresh dough. Lubricate with ghee butter and repeat the assembly of the cake in the same sequence.







  10. The uppermost crust-cover of fresh dough is smeared abundantly with sour cream. Send the cake to the oven for 60 minutes at a temperature of 180 degrees. Take the finished dessert out of the oven, cover with a towel and let it cool completely in shape. You can even put it in the refrigerator for 1 hour. It is not recommended to cut the sweet gibana in a warm or even hot form - it will fall apart.
