Unusual avocado salad with orange marinade

The recipe for this salad I took from the course Ksenia Mikhailova "Healthy food for all". The salad is bright, tasty and easy, although the ingredients and had to run — the arugula is not available in all stores, and fresh arugula generally in short supply. But the search was worth it!





  • 1 avocado, cut into small cubes
  • Forks 1 salad, chopped
  • 1 tbsp. arugula, chopped
  • 3 oranges, cut into thin slices, then strips
  • 1 purple onion, finely chopped
  • 2 tbsp parsley, chopped
Marinade:

  • 8 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tbsp orange juice, freshly squeezed
  • black pepper and salt to taste
In a blender mix the marinade, mix all the other ingredients. To put the salad bowl lettuce, she put the vegetables, pour the marinade and sprinkle with parsley.





Serve, garnished with slices of orange and parsley sprigs.
