I do not make twists, instead I dry berries and fruits, all vitamins are preserved.

The summer season is in full swing. While the markets are bursting with a variety of products, skilled housewives do not waste time. We also try to keep up and please you with the most relevant information. For example, today's edition "Site" will tell How to dry fruits and berries correctly. Small spoiler: special drying for this is not always necessary.

It is possible to harvest summer berries for the winter in different ways. For example, make jam or jam from them, as well as preserve the gifts of nature in a whole form. However, you can save the maximum benefit from berries if you learn how to dry them correctly. The secrets of this process were shared by the famous Ukrainian chef Evgeny Klopotenko.

Dried fruits and berries are not only a nutritious snack or snack, but also a great addition to the main dish. For example, breakfast in the form of oatmeal or chia pudding. In addition, dried fruits can be cooked compotes and even mulled wine.

Each fruit needs preparation for drying. So, apples and pears should be peeled from the core and seeds. And from cherries, cherries, plums and apricots it is important to pull out the bones. If you grind raw materials for blanks, all the pieces should be the same size.

Keep in mind that the size and thickness depends on how long it will take to dry. The thinner and smaller the pieces, the faster they will dry. If you plan to dry the berries (currant, blueberry or gooseberry), pierce each of them with a thin needle. So they will dry out evenly and quickly from the inside.

By the way, if you are going to make blanks from apples, you can dry the skin separately. It contains many useful substances for the body. It is important to cut the skin so that it is not too thin.

To dry fruits or berries for the winter, it is not necessary to use a special device for this. My grandfather, for example, always dried apples over a gas stove. But that's not the safest way. It’s easier to just do it in the sun.

The trick of this method is that the product is in the fresh air. Fruits and berries need a minimum amount of sunlight. It is important that the air temperature does not exceed 28-30 degrees. The lower the humidity in the room, the better. Also make sure that the room is ventilated.

The optimal drying period in the fresh air is 3-4 days. Time depends on how big and small pieces of fruit you need to dry. If you dry food on a balcony with an open window, it is better to cover them with gauze or a thin cotton cloth. This will save the raw materials from harmful flies and bees.

Berries and fruits, including citrus fruits, can also be dried in the oven. The optimum temperature is 70 degrees Celsius. At the same time, it is extremely important that air circulates in the oven. The convection regime is responsible for this.

If there is no such mode in your oven, then you can just slightly open the door during drying. Prepared fruits are important to put in one layer on the pan. First, be sure to cover it with parchment paper.

To speed up the drying process, from time to time fruits or berries can be turned over. They will dry faster and more evenly. In general, it will take from 4 to 12 hours. This again depends on the size and thickness of the blanks.

For drying products there is a special device called a dehydrator. You can buy it at any home appliance store. This device will suit you if you plan to dry a large amount of fruits, berries, vegetables and greens, and also plan to do it every year.

Do not buy drying if you have never dried food before. It is easier to borrow it from friends to understand whether you need such a device in principle. Klopotenko does not advise drying different fruits or vegetables in the dehydrator at once. There is a high probability that some of them will dry unevenly.

Make sure the pieces are at a distance from each other. Otherwise, during drying, they can stick together. The drying time depends on the products and modes of operation of the dehydrator. It's usually 8-36 hours. The more powerful the drying, the faster it will dry the raw materials.

It is best to store dried fruits or berries in sealed containers or cans. If they are well dried and have little moisture, a refrigerator for storage is not needed.

That's all the wisdom for today. It would be great if you shared this article with your friends!
