  • 5 potatoes
  • 1 bulb (red)
  • 2 large pickles (or 4-6 small ones)
  • 1 bundle parsley
  • 150ml sour cream
  • 2 tbsp olive oil
  • dijon mustard
  • lemon juice
  • salt and pepper




Preparation
  1. First, we need to boil the peeled potatoes until ready. It should be soft, but not fall apart to a state of puree.
  2. While the potatoes are cooked, finely slice cucumbers, onions and parsley. If the cucumbers are small, you need to take more than 2 pieces. The volume of cucumbers and onions should be approximately equal.
  3. Pour water from potatoes, put in a bowl in which we will mix the salad.
  4. Hot potatoes right in the bowl arbitrarily cut with a knife. At this stage, everything should be done quickly, because the hot potatoes, the better it will absorb the tastes and aromas of other ingredients. To cut potatoes add olive oil, lemon juice, pepper and salt. It is important not to overdo it, because the salad will have pickles.
  5. Add the crushed parsley and gently stir the salad. We wait a few minutes for the potatoes to absorb the tastes and smells.
  6. Then add sour cream, onions, cucumbers and mustard. Stir again carefully so that the potatoes do not turn into porridge.




Salad can be eaten warm, but before it is worth it. let him stand for 5-10 minutes. Personally, I prefer this salad in a cold form. After the refrigerator, it tastes different. If you don’t like it, give the potato salad a second chance when it cools.
