A recipe for plum jam with chocolate

Nostalgic memories prompted the decision to cook the same grandmother's plum jam. Unfortunately, the recipe has not survived. I can only remember how surprised I was at the age of seven by an unexpected combination of tastes: plum and chocolate. What sweet tooth can resist such a thing?

  • 500g drain
  • 250g sugar
  • peel 1 lemon of medium size
  • 50g dark chocolate
  • 50g cognac
  • 10g vanilla sugar


Preparation
  1. Wash the plums, extract the bones from them. If it's too big, cut it.

  2. Put the plums in the pan, add half the sugar. After that, remove them in the cold for 8-12 hours to let the juice.


  3. With a very fine grater, remove the zest from the lemon.
  4. Break the chocolate into small pieces.


  5. Put the infused plums on the fire, add the remaining sugar and bring to a boil. Cook on a small heat for 2 minutes, stirring constantly.
  6. Add lemon peel and vanilla sugar.
  7. Cook for another 1 minute.
  8. Add cognac and chocolate to the pan. Cook for another 1 minute. All jam should boil no more than 4 minutes!


  9. Hot jam spills on sterilized banks. Cool it and cover it.

I know this forgotten taste well, my grandmother, of course, did not add cognac, and otherwise everything turned out quite old. Plum and chocolate fit together well, it is sour, it is bitter, but together with some Nostradamus magic they promise a sweet life and pleasant winter tea parties.
