Preparation
  1. First, we need to warm the milk. Put it in a pot and put it on fire.
  2. While the milk is heated, prepare the eggs. Separate yolks from proteins. Do this carefully so that the yolk in any case does not get to the proteins. The container into which we break down proteins should be dry and clean.


  3. Add sugar to the yolks. With the help of a wreath, we mix well. Vanilla sugar can be added at this stage if desired. Add to the yolk mass a little milk and stir again.
  4. The resulting mixture is poured into hot milk in small portions, gradually so that the yolks do not clot. Constantly stirring, bring the mixture to a boil. Then we pour the mass from the pan into another container so that it cools faster.


  5. In the meantime, prepare the proteins. In a bowl of proteins add a pinch of salt and sugar. With the help of a corolla, stir all the ingredients so that the mass becomes more homogeneous.
  6. Then put the protein mass on the water bath. The bottom of the bowl of proteins should touch boiling water. The mixture is continuously whipped with a corolla for 12-15 minutes in a water bath.
