At that time, I did not know that their author was the favorite queen of Soviet pastries, Daria Yakovlevna Tsvek. On the eve of the Bright Feast of the Resurrection of Christ "Site" I collected a selection of recipes from Daria Yakovlevna.

Today we invite readers to use time-tested recipes again to bake light, incredibly fluffy and at the same time hearty cakes from “sweet Daria”.

Kulich "The Secret" by Daria Tsvek

The ingredients
  • 1kg flour
  • 400g milk
  • 10 yolks
  • 100g pressed yeast
  • 200g butter or margarine
  • 300g sugar
  • 100g raisins
  • 0.5 tsp salt
  • lemon peel


Preparation
  1. Dilute the yeast in warm milk, add 100 grams of sugar and 20 grams of flour.
  2. Stir and put in a warm place until the opara increases in volume by 2 times.
  3. After that, add the rest of the sugar, yolks, raisins, peel, salt and flour.
  4. Mix the dough, at the end add melted but chilled fat.
  5. Mess the dough for about 10 minutes until it begins to fall behind.
  6. Leave the dough in a warm place so that it grows 2 times.
  7. Fill in a third of the form. Let the dough double again.
  8. Heat the oven to 200 degrees. Bake a cake for 10 minutes, then lower the temperature to 170 degrees. Bake another 50 minutes.
  9. From the listed ingredients, 3 cakes with a diameter of 18, 20 and 25 centimeters are obtained.

Pokutsky Kulich

Pokutia is a historical area in the west of Ukraine between the rivers Prut and Cheremos (now part of the Ivano-Frankivsk region of Ukraine).

The ingredients
  • 1kg flour
  • 1 tbsp milk
  • 15 yolks
  • 100g pressed yeast
  • 300g butter or margarine
  • 400g sugar
  • 100g raisins
  • 0.5 tsp salt
  • vanilla


Glaze ingredients
  • 2 proteins
  • 200g powdered sugar
  • juice
  • vanilla


Preparation
  1. Dilute in warm milk yeast with a tablespoon of sugar and 3 tablespoons of flour. Put it in a warm place.
  2. Mix yolks, sugar and vanilla in a pan. Put this pan in a large pot of boiling water. Beat the yolks until you get a homogeneous mass, let it cool.
  3. Add the yeast mixture, pour into the flour container, add the yolks. Mix the dough.
  4. At the very end, add the melted fat, stir until the fat is evenly distributed throughout the dough.
  5. Add the washed raisins, stir. Cover and put it in a warm place to make the dough fit.
  6. Move the dough into an oiled mold, filling it with two-thirds. Cover and set it up to fit.
  7. Prepare the icing. To do this, rub the proteins with a spoonful of powdered sugar to uniformity, add lemon juice, vanilla.
  8. Lubricate the cake with proteins and bake in the oven at a temperature of 200 degrees 45 minutes.

  • 50g candied
  • 3 almonds

  • 1.5 tables of water

  • 1 tsp butter

Preparation

Preparation
