Bread-salted Ukrainian hostess teaches oven classic cakes according to the recipe of Daria Tsvek

The Easter holiday is approaching. We are already in full preparation for the celebration and share with you fresh recipes of traditional holiday treats. Today we will tell you how to cook. paschal according to the recipe of the famous Ukrainian cook Daria Tsvek. It turns out very soft and airy, like a cloud!



In the West of Ukraine, Easter kulich is traditionally called a festive woman (“Bab Svyatkova”). In the 70s, the recipe for this treat was shared in her cookbook Daria Zvek. Easter cake on yeast is prepared very simply. Even if you've never baked this sweet treat before, you'll definitely succeed!

Ingredients for opar
  • 0.5 liters of milk
  • 50g live yeast (or 15g dry yeast)
  • 1 tbsp sugar
  • 8 tbsp wheat flour (of total)


Test ingredients
  • 11 yolks
  • 200g butter
  • 200g sugar
  • 30g vanilla sugar
  • 1,250g wheat flour
  • 200g raisins
  • 1 orange


Preparation
  1. First of all, warm the milk a little for the vapor. Add sugar and yeast to it. Stir it well so that the yeast dissolves. Then add flour to the future pool and mix the mass so that there are no lumps of flour. Cover the bowl with a towel and send it to a warm place for 30-40 minutes. By tradition, a sprig of consecrated willow is placed on the towel. Thanks to her, the opara will be even better.



  2. While the opara fits, you can make the main dough. To do this, mix 10 yolks with melted butter, ordinary and vanilla sugar. Hit the mass with a blender until it gets lighter.
  3. If there are bubbles on the sheep, it means that the yeast is activated. Add a yolk mass to the poop and stir everything with a corolla. Then in several stages add to the dough sifted flour. Stir the dough with your hands. The dough should be quite sticky, but it should be well mixed.



  4. It takes a long time to stir the dough. If you do this with your hands, you will have to work at least 30-40 minutes. A food processor at an average speed will cope in 10-15 minutes. The finished dough will be smooth and elastic.
When the dough is ready, add raisins and peel 1 orange to it and mix the ingredients well into it. Further, according to tradition, the dough should be blessed by making a sign of the cross on it. Then cover the dough with a towel and send it to a warm place for 1 hour. The dough will do fine. It should be washed, and then again covered with a towel and put in a warm place for 1.5 hours. After that, the dough will rise even more. Stir it and prepare the baking moulds. This volume of the test will be enough for 9 molds of size 8 by 11 cm.



Grease your hands with butter, tear some dough and form a ball out of it. Make sure there's no raisins on top of the dough. It can burn during baking. Put the blanks in the forms. The dough should not occupy more than one-third of the shape. Give future kulichs another 30-40 minutes so that they fit properly and increase in volume. Then lubricate the top of the pastry with a yolk mixed with water. Bake cakes for about 1 hour at 165 degrees. However, remember to focus on your oven.
