How to make original pancakes of broccoli

We all used to think muffins are not very useful dish. But this recipe will change your opinion. You will be surprised how many here broccoli. To prepare 6 pancakes need a whole head(!) and only 3/4 Cup of the batter. The secret is to only lightly crush the cooked broccoli. And the dough only need to keep these pieces together.





Pancakes of broccoli with Parmesan and garlic

Ingredients (for 6 servings):

3 cups broccoli (medium head) and stems (chopped into pieces 2 cm)
2 tablespoons oil (vegetable, olive)

For the dough:

  • 1 clove garlic, crushed
  • ½ Cup flour (spelt)
  • ¼ Cup grated Parmesan
  • 1 egg
  • 2 tablespoons milk (you can use an alternative)
  • ½ Teaspoon salt
  • black pepper




For yogurt sauce:

  • ¼ Cup plain yogurt
  • 2 teaspoons lemon juice
  • salt and pepper
 





Preparation:
 

1. Cook broccoli (or cook for a couple). It should not be too soft.

2. Then puree (it should not be uniform. The main thing that was not large pieces, so the muffins came out smooth).

3. Mix ingredients for yogurt sauce.

4. In a bowl, lightly beat with a fork egg. Add the remaining ingredients for the dough and mix well. It may seem that the dough is too thick, but when you add broccoli, it will release some juice.

5. Add broccoli, mix well.

6. Heat (on medium heat) 1 tablespoon of oil in a pan.

7. Fry pancakes with a thickness of 1.3 cm for 2-3 minutes on each side until Golden brown.

8. Serve with yogurt sauce and lemon juice.
