Useful pumpkin muffins are the hit of the season!

What could be better in autumn than a wholesome pumpkin dessert? Enjoy yourself and your loved ones with muffins from this healthy vegetable.



Ingredient:

  • 2 eggs
  • 3 tablespoons of milk
  • 95g (1/2 cup) brown sugar
  • 125 ml (1/2 cup) of olive oil
  • 155g (1 cup) grated pumpkin
  • 55g (1/2 cup) ground almonds (almond flour)
  • 40 g (1/3 cup) of crushed walnuts (optional)
  • 150g (1 cup) coarse flour with baking powder added
  • 1⁄2 teaspoon of ground cinnamon


Preparation:

Warm the oven to 180°C. Cover the muffin mold (12 x 80ml) with parchment paper.

Beat together eggs, milk, sugar and butter. Add pumpkin, almonds and walnuts to this mixture, whip in a blender.

Add flour and cinnamon, stir until a homogeneous mass.

Pour the dough into molds and bake for 20 minutes (check readiness with a toothpick, it should come out of the muffin dry).

Leave in the form for 5 minutes, and then lay the muffins on the bars to cool them.
