Soup with beans and broccoli

Found this wonderful soup has been in my bookmarks twice as much — a clear sign that we should cook, when faced with this choice :)) And he, of course, I did not disappoint — lovely, gentle, sweet, nourishing, and what fragrant! And his rosemary scent over time, only increased — it was very nice :) And it is delicious both cold and hot :)
 



 We will need:
 

  • Broccoli 200 gr.
  • White beans 100 gr. (I had beans dolichos)
  • Carrots 1 piece
  • Onion 1 piece
  • Celery (stem) 1 piece
  • 1 clove garlic
  • Rosemary 1 tsp.
  • Vegetable broth 750 ml
  • Olive oil 1 tbsp.
  • Salt, ground black pepper to taste
Soak the beans overnight, boil until tender. In a saucepan with a thick bottom heat the olive oil. Fry the chopped onion and garlic. Add rosemary, sliced carrots and celery, cook on low heat until the vegetables are soft. Pour in the stock, add the white beans and cook under a lid for 10 minutes after boiling. Broccoli cut into medium-sized and add to the pot. Cook for 5 minutes, blend the soup, leaving some whole pieces of vegetables and beans, season with salt and pepper to taste.
