Winter joy - potato zrazy

Not inventing the wheel, sometimes you want to return to the simple and tested recipes used by many generations. Haute cuisine excites the mind, and impart a taste and delights with its beauty, thoughtfulness, refinement, complexity and diversity. A simple folk – nourishes, gives the feeling of warmth, awakens the best memories, it is delicious, and happy family. And often these are home-cooked meals, familiar or a little forgotten, interesting to all because they're on the shoulder to everyone, not just sophisticated cooks.

So come on out to the kitchen together to cook the dish, which has many analogies in the kitchens of different peoples — potato zrazy.





For a basis we take the Lithuanian version, Žemaičių blynai. The recipe is simple, but each family has their own, like borscht recipe, for example. No claim to authenticity, we'll do it your way, it is like us in these recipes – the multiplicity. Traditionally, these pancakes (although in appearance they are not quite pancakes, more – pies) are made of boiled potatoes stuffed with boiled meat. But the filling can be mushroom, and vegetable, and in General – it's just a matter of preference and imagination. Braised sauerkraut, carrots, beets, roasted brisket, cheese, prepared fish, hard-boiled eggs, cheese, fried onions, pickled or fried mushrooms, and many more options. This time we did chicken and sun-dried tomatoes (the main thing that the cheese was not too salty) and fried pork belly, seasoned with green onions.



Ingredients:

  • 1 kg of potatoes
  • 5 tbsp flour
  • 1 egg
  • salt
Flour or breadcrumbs for breading
Vegetable oil or lard for frying

Preparation:

Prepare the filling of finely chopped ingredients, if necessary add salt and pepper.

Boil the potatoes in their skins until tender, peel and mash thoroughly or pass through a meat grinder. Cool, add salt, flour, egg and knead.

With wet hands pinch off piece of dough the size of a chicken egg, flatten on your palm into a pancake, put the filling, connect the edges of the pellets and formed into a Patty, lightly sprysnuv it. Roll in flour or breadcrumbs and fry in a hot pan in vegetable oil for 1-2 minutes until Golden brown, flip and fry the second side. Reduce heat and cook for another 2 minutes on each side.

Serve with sour cream, mushroom sauce, or with fried onions.
