Amazing cake with lemon

Ingredients:

  • 3 cups flour

  • 300 g butter

  • 3 tbsp vegetable oil

  • 1 egg





For the filling:

  • 2 large lemons or 3 medium

  • 1 large egg

  • 75 g butter

  • 1 Cup sugar

 

Method of preparation:

 

1. For the filling, wash the lemons with a brush and put them whole in poorly boiling water. Cook for 5-7 minutes, remove, cool. Then grate or cut into pieces and grind in a blender – it is very important to remove out of lemons all the bones, otherwise the filling will be very bitter.

2. Melt the butter and cool. Mix lemon weight with beaten egg, butter and sugar.

3. For the dough cut the cold butter in small pieces. Sprinkle on the work surface the flour slide, she put the butter and chop with a knife or mash with your hands into crumbs.

4. Knead the dough, adding vegetable oil and about 0.5 cups of ice water. Gather dough into a ball, divide into 2 unequal parts, wrap in cling film and put in the fridge for 30 min.

5. Cover a baking sheet with baking paper. Roll out both pieces of dough in layers. A larger piece put on the paper, spread the filling on it, leaving a free edge with a width of approximately 1.5 cm.

6. Put the filling on the second layer of dough and carefully zasypnica edges so that the filling doesn't run out. Brush the dough with beaten egg, make holes for steam outlet. Bake at 180 °C until Golden brown, about 40 min.
