Vegan muffins with blueberries

Ingredients for 12 muffins:

Dry ingredients:

  • 2 cups whole wheat flour
  • 1 Cup coconut sugar (or 3/4 Cup)
  • 1/2 teaspoon turmeric
  • 1 teaspoon cinnamon (optional)
  • 2 teaspoons baking powder
  • pinch of sea salt
 

Wet ingredients:

  • 2 tablespoons crushed flax seeds mixed with 6 tablespoons of water
  • 1 3/4 cups almond milk
  • 1/3 Cup coconut oil
  • vanilla extract 1 teaspoon
  • 1 Cup fresh/ frozen blueberries
  • 3/4 Cup chopped walnuts
Preparation:

1. Preheat the oven to 170

2. All the dry ingredients, mix with a fork in a bowl

3. Prepare flax-seed, fill it with water and give it time to swell to approximately two to three minutes.

4. Slowly add wet ingredients to dry ingredients and mix with a spatula. Note: If the dough is too thick, add another few tablespoons of almond milk.

5. Carefully add the blueberries and walnuts into the dough.

6. Pour the batter into the molds.

7. Bake in the oven for 25 — 30 minutes until the muffins are Golden brown. To determine the readiness with a toothpick: if the dough is ready it should come out dry.
