Arugula salad with avocado and walnuts
Ingredients:
3 tbsp. l. olive oil;
2 tbsp. l. fresh lemon juice;
1 h. L. grainy mustard;
1 bunch of arugula;
½ red onion;
2 avocados;
2 tbsp. l. chopped walnuts (and tastier if the nuts are soaked for a few hours).
Preparation:
In a small bowl, mix the oil, lemon juice and mustard. Avocado cut in half and thinly slice lengthwise. Onion cut into thin half-rings and put in a bowl, add the arugula, season with ½ the sauce and mix. Top with avocado, sprinkle with walnuts and drizzle with the remaining sauce.
