Apricot cake Ingredients for biscuit

- 300 ml cream (30 % fat)
- 300g cottage cheese
- 180g sugar
- 70ml sour cream
- 30g gelatin
- 10g vanilla sugar
Preparation
- Let's do the biscuit first. The eggs were divided into white and yolk. Start squirrels, add a pinch of salt. When the proteins are slightly whipped, add sugar a little. Hit it all the way up. Then add the yolks to the proteins one by one and keep whipping. In several approaches, add sifted flour to this mixture. Mix air dough. Put it in a parchment-covered form. Send the oven heated to 180 degrees for 25 minutes.
- The biscuit needs to cool. Then you have to remove the upper crust from it. From the finished biscuit cut in a circle about 1 centimeter. Cut the biscuit in a shape the same diameter as the one you baked it in. Put the film on the sides. The biscuit itself can be soaked in sugar syrup.
- Now make the cream. Dilute gelatin in water and leave it to swell. Meanwhile, wash the apricots, remove the seeds and grind the fruit in a blender to a homogeneous mass. You can pre-clean apricots from the skin. Separately, in a blender, whip cottage cheese with sugar and sour cream.
- In a separate container, whip cold cream. Gradually add sugar and vanilla. When the cream thickens, stop whipping. Here, add cottage cheese and mix to a homogeneous mass.
- Warm up the gelatin. Add half to the apricot puree. The other half to the cream. Stir it well. Then pour the cream on top of the prepared biscuit, evenly spreading it in shape. On top of the cream, gently pour apricot puree. Before it freezes, you can draw an arbitrary pattern on the cake with a fork, it will turn out very beautiful. Send the cake to the refrigerator for at least 3-4 hours, or better at night.
