Cutting process
  1. First of all, thoroughly wash the herring under running water.

  2. Then, with a sharp knife, separate the head from the carcass.
  3. Cut the fish belly from the head to the tail. Get rid of the insides. If you are lucky enough to have caviar in your abdomen, you can use it for sandwiches. It's very delicious.

  4. The eviscerated herring washed again with running water. Now you have to peel the skin off the carcass. To do this, first make a deep incision along the ridge, in the direction from head to tail.

  5. Remove the dorsal fin immediately. And then, gently picking up the edge of the skin with the tip of the knife, remove it from top to bottom.

  6. Now it's important! Divide the tail in two. Hold the herring firmly by the tail with two hands, in one hand - one part of the tail, in the other - the second. Holding the fish in this way, wrap the herring around the tail, while a small tear will already appear near the tail.

  7. Carefully, slowly, slowly continue the separation of the herring, while all, even very small, bones will remain on the part where the back.
  8. It remains to cut off the tail and separate the spine along with most of the bones from the back.
  9. Check the finished fillet parts. Remove any remaining bones from them. A regular fork will help you with this.

  10. Under the remaining side bones of the herring, shove the fork cloves, pull them on yourself and remove them. If you do this carefully, there will be no bones left.

  11. After removing the bones, the fillets can be cut into portion pieces or used for salad.
