Kulich "Craffin" Ingredients
  • 350g wheat flour
  • 110 ml of milk
  • 2 yolks
  • 1 egg
  • 40g butter
  • 100g almond petals
  • 80g sugar
  • 0.5 tsp salt
  • 1 tsp nutmeg
  • 7g yeast
  • 200 g dried cranberries (raisins or other dried fruits may be used)
  • 8g vanilla sugar


Preparation
  1. Mix yeast with 1 tsp of sugar and pour warm milk. Place the mixture in a warm place, wait until the foam cap rises above it.


  2. Melt the butter in the sothein. In a deep vessel beat yolks with egg and vanilla sugar. Blow the egg mass until the formation of lush foam.


  3. Ask for flour in a deep bowl, and in the center make a small depression. Pour in the raised yeast, add whipped egg mixture, some melted butter and salt. Mix all the ingredients thoroughly, add the remaining butter and mix the dough. Mess until the dough stops sticking to your fingers.


  4. Move the dough into deep dishes lubricated with butter. Slightly lubricate the surface with oil, cover with food film and send it to a warm place for 1.5-2 hours so that the dough for future cakes rises.


  5. When the dough rises, divide it into three equal parts, roll from each ball and wrap it in film for another 10 minutes.


  6. Pour flour on the working surface, roll one part of the dough into a thin rectangular layer. The dough should be translucent, but do not overdo it so that it does not break. Grease the dough with softened butter.


  7. Spread evenly over the surface nutmeg, cranberry and almond flakes. You can use any other dried fruits and candied fruit to taste.


  8. Carefully roll the dough into the roll. Do the same with the remaining parts of the test. In the end, there should be 3 holiday cakes!


  9. With a sharp knife, cut the roll along, without cutting a few centimeters to the edge.


  10. Turn half the roll into a spiral, do the same with the other half, but place it on top of the first. Do that to every roll.


  11. Place the cakes in baking molds and leave for 20 minutes in a warm place.


  12. When the dough rises slightly, warm the oven to 200°C and send the Easter Cruffins there for 10 minutes. Then reduce the temperature to 180 ° C, cover the cakes with foil and bake for another 10 minutes. After that, take off the foil and bake the Easter cakes for another 15 minutes.


  13. The Cruffin Easter cake is ready. Pour the finished treat with powdered sugar and quickly serve to the table. The dough turns lush, as in traditional cakes, fragrant and tender. Best treat for Easter!
