Dietary dish of eggplant Ingredients
  • 1 medium eggplant
  • 1/2 tsp salt
  • sprigs of fresh basil
  • 1 tbsp vegetable oil
  • 1 tbsp grated low-fat cheese
  • 2 cloves of garlic
  • 1 big tomato
  • 1/2 tsp Provence herb mixture


Preparation
  1. Wash the eggplant, cut the edges. Cut the rings with a thickness of 1 cm and send into cold, salted water for a few minutes to get rid of the bitterness.
  2. Remove eggplant from the water, dry it on paper-towel. In the meantime, warm the oven to 180 degrees.


  3. Garlic grind and roast it in vegetable oil until golden.


  4. Add to the garlic crushed basil greens, sliced in small cubes tomatoes and carcasses until ready.


  5. Put the eggplant on the pan, sprinkling with Provencal herbs, bake for 20 minutes.


  6. After the due time, lay out on the eggplant tomato mixture, sprinkle cheese and cook in the oven for another 10 minutes.
