Beet muffin with nuts

Until recently, I used beets only for making salads, and borscht of course. But here is a recipe that has expanded my culinary horizons!

A muffin with nuts, spices and beets is as tasty as it is beautiful. Slightly moist texture and unusually bright flesh color make this pastry look like the legendary “Red Velvet”, and the combination of nuts and spices leaves an unforgettable gastronomic impression.





Cake with nuts Ingredients
  • 3 medium-sized boiled beets
  • 3 eggs
  • 150 ml of yogurt or low-fat sour cream
  • 200g sugar
  • 50ml vegetable oil
  • 75g flour
  • 200g manka
  • 150g walnuts
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • pinch
  • butter


Preparation
  1. Sodium (or baked) beets on a grater with small holes.
  2. Walnuts. Put it in a bag and grind it with a roller. They can also be cut with a small knife.


  3. Beat eggs with sugar before the appearance of bubbles, add vegetable oil, yogurt (you can also use yogurt, liquid sour cream).
  4. Pour into the liquid mass flour, semolina, baking powder, cinnamon and a pinch of ground cloves. Add also grated beets and chopped walnuts.
  5. Baking mold grease butter And sprinkle flour. Pour the dough. Bake a cupcake at 180 degrees 40-50 minutes. Check your readiness with a wooden toothpick or match.


  6. Let the cupcake cool a little in shape, then carefully extract. Decorate with powdered sugar and bring it to the table!






Not everyone will decide on such an experiment, but the dish in this case really deserves praise. My recipe collection has been replenished with another great beet dish.
