Baking a traditional Italian Christmas cake

  • 800g flour
  • 1 tbsp milk
  • 1.5 tables of sugar
  • 40g fresh yeast
  • 150g butter
  • 3 eggs
  • 2 egg yolks
  • 2/3 tbsp candied
  • 150g raisins
  • 150g dried
  • 1 tsp nutmeg
  • 0.5 tsp cardamom
  • 1 tbsp grated lemon or orange peel
  • 2 bags of vanilla sugar


Preparation
  1. Rub the yeast with 2 tbsp of sugar. Add to them 3-4 tbsp. l of warm milk. Add 2 tbsp flour here, mix well. Leave the mass for about 15 minutes until small bubbles appear on its surface.


  2. Ask for 2 tbsp flour in a bowl. Pour warm milk into the flour, mix well. The mass at this stage should be viscous! Add the prepared yeast to it.
  3. Carefully stir the dough to a homogeneous state. Leave the dough to rise in a warm place for 1-2 hours.
  4. Beat the eggs in the foam, add the yolks, stir everything and pour it into the dough. Here, add softened butter, sliced in pieces, and sugar.
  5. Add another 3 tbsp flour, sugar and spices. Don't spare spices! For the fragrance, you can add 2 tbsp. l. cognac or rum, this will give the cupcake a special taste.
  6. Put the well-mixed dough in a warm place for 2 hours.
  7. Cut the candied and dried fruit in small pieces. If you want to cook. Christmas cakeIt is time to add nuts, also cutting them not very large. Steamed raisins - how appetizing it will be in the finished dough...


  8. Mix the dough again. Oil the mold, place the dough in it and leave it to rise warm for another 1 hour. Bake a cupcake at a temperature of 180 degrees about 45-50 minutes.


  9. You can decorate a Christmas cake with whipped protein and nuts, or you can simply lubricate the dough with the yolk before placing it in the oven.




You can also melt marmalade with a little water in the microwave and decorate it with a cupcake on top! It will be bright and very unusual. Nuts and any dried fruit will also be used in the process of decoration!
