  • 150g flour
  • 70g butter
  • 20g powdered sugar

Preparation
  1. To prepare sand dough, mix in a bowl of blender (with knives) flour, salt, powdered sugar and cold butter. Grind all the ingredients into a homogeneous crumb. Add the egg and stir it up again.



  2. Collect the finished dough in a lump, wrap it in food film and send it to the refrigerator for half an hour.



  3. Wash pears and peel off the peel and core.



  4. For caramel on a cold dry pan pour sugar in a thin layer and turn on a large fire. Wait until the sugar melts. Periodically sprinkle sugar in places where it has already melted. All sugar should dissolve in caramel without burning. Burnt caramel is bitter, which means it is not suitable for cake. Also note that caramel is not necessary to mix, otherwise it will crystallize. You can simply turn the pan from side to side, helping the sugar dissolve faster.





  5. When all the sugar has melted, reduce the fire to medium and add some butter. Stir the oil well with caramel with a silicone spatula, and then lay out the pears. Leave pears in caramel for 10 minutes so they caramelize well.



  6. Shift pears to the bottom of the form for baking (I have it measuring 22 centimeters), fields on top with the remains of caramel.



  7. Roll the dough into a thin layer about 3-4 mm thick. Carefully with the help of a roller, transfer the dough to pears, turn the extra edges inside the form. Bake the cake in a preheated to 180 degrees oven for half an hour.



  8. Cool the cake, drain the excess liquid and turn the cake over with a plate. Decorate it to taste. Bon appetit!
