How to prepare amazing vegetarian Pho with shiitake mushrooms

Pho is a broth with seasonings. Most importantly, it is completely vegan, this recipe does not contain meat or fish. Therefore, for an ideal the soup you will need to play a bit with lime sauce medley Santa and Hoisin.





Ingredients:

 

  • 8 PCs. stud
  • 3 anise
  • 2 teaspoons coriander
  • 1 stick cinnamon
  • 1.25 l (5 cups) vegetable broth
  • 30 g (5 cm x 3 cm) of ginger, finely chopped
  • 25 g (10-12 small) dried shiitake mushrooms
  • 1⁄2 brown onion, finely chopped
  • 1 1⁄2 tbsp soy sauce
  • 3 sheets nori
  • salt and pepper
  • 200 g carrots, chopped


 

For serving:

  • 150 g rice noodles, soaked in hot water for 10 minutes
  • the sprouts
  • sliced long red chilli
  • fresh herbs (mint, coriander or Basil)
  • lime slices
  • the Hoisin sauce (optional)
  • chili sauce (optional)
 

Preparation:

Cloves, anise, coriander and cinnamon stick, place in medium saucepan. On medium heat, slightly fry for 2-3 minutes (the spices will become fragrant). Add the broth, ginger, shiitake mushrooms, onions and soy sauce, bring to a boil. Reduce high temperature and simmer on low heat.

At the same time, fry the nori, (hold for 30-40 seconds to heat until they lightly not browned). Add the nori into the soup, and season with black pepper and a pinch of salt. Cover and simmer for 20 minutes. Add carrots, cover again, continue to cook on low heat for 6-8 minutes until tender. Try may need to add some more seasonings to taste. Leave on low heat so the soup stayed hot.

Remove the carrots and shiitake mushrooms, cut into small pieces.

Divide the rice noodles between two deep bowls and top off with carrots and mushrooms. Pour the hot broth, garnish with sprouted beans, chili peppers and herbs. Serve with slices of lime, Hoisin and chili sauce. Enjoy!
