French mussel soup
RECIPE FRENCH MUSSEL SOUP
Need:
- a pack of butter
- 1 kg of onions
- the juice of 3 lemons
- 1 l cream (Alexander advises to combine greasy and non-greasy cream is approximately 50×50)
- 1 kg of chilled mussels (can use frozen)
- salt, pepper – to taste
1. In a large saucepan with a thick bottom, melt the butter, but in no case do not boil. Add the onions cut in thin long strips. Simmer over low heat until yellow and soft.
2. Add the lemon juice and cream. Bring to boil, stir. Add the mussels, salt and pepper. Cook for 10-15 minutes until, until the mussels open.
3. Serve it with a white ciabatta and white wine.
Soup at times tastes better 2-3 days.
