Cod with flavored crust from almonds, coconut and ginger-soy sauce





INGREDIENTS for 3 portions/

Fish

  • 3 piece cod fillet or other meaty white fish
  • 1/3 Cup flaked almonds (or grind in a blender almonds, or bread crumbs)
  • 1/3 Cup coconut
  • 1 tablespoon brown sugar
  • 2 tablespoons flour
  • Egg
  • Salt, pepper
  • 1 tablespoon vegetable oil
 

For the sauce

  • Juice of 1 orange
  • 1 tablespoon brown sugar
  • 4 tablespoons soy sauce
  • 1 teaspoon chili sauce (or 1/2 teaspoon Tabasco or 1/4 teaspoon Cayenne pepper)
  • 1 teaspoon sesame oil
  • 2 teaspoons of grated ginger
  • 1 teaspoon flour
METHOD OF PREPARATION:

Sauce

  • Step 1. Combine the soy sauce, orange juice, ginger, hot sauce, brown sugar and sesame oil in a small saucepan and preheat over medium heat.
  • Step 2. Mix the flour with a tablespoon of water to avoid lumps. Add in the soy mixture. Cook over low heat until the sauce thickens.
Fish

  • Step 1. Preheat the oven to 200 degrees.
  • Step 2. Chop the almonds with a knife, mix with sugar, coconut, 1/2 teaspoon salt and freshly ground black pepper.
  • Step 3. Dry the fish with paper towel, season with salt and pepper.
  • Step 4. Roll the fish in flour. Shake off the excess flour from the fish.
  • Step 5. Egg whisk with a fork and apply on one side of the fish.
  • Step 6. Put the fish in almond crumb, egg side down and press slightly, so that the nut mixture is well stuck to the fish.
  • Step 7. Heat the vegetable oil in a frying pan on medium-high heat. When the oil is hot, place fish in nut mixture down, and cook one and a half to two minutes.
  • Step 8. Turn the fish over and send along with the pan in the oven for 7-10 minutes.
  • Step 9. Serve the fish hot with the sauce and your favourite side dish.published
