Rye waffles with herring mousse

Rye waffles

  • 10-15 small waffles
  • 1 tbsp rye malt flour
  • 9 tbsp wheat flour
  • 2 eggs
  • 80 ml olive oil
  • 1 tablespoon of sugar
  • 1/2 tsp salt
  • ground coriander, cumin, cardamom and cinnamon to taste
  • water
Combine all dry ingredients, mix well. Pour in the oil, beat the eggs, stir, gradually pouring water. The batter should be the consistency of a liquid sour cream. Leave for 10 minutes.

Herring mousse for 4 servings:

  • 200 g herring fillet
  • 200 g of cottage cheese
  • 1 small onion
  • Solid 1 green Apple, preferably sour
