Soul food — know WHAT You eat!

Our favorite salads from Kale can not be called "healthy" food — "healthy" food does not happen. His faith in the "healthy" foods we ourselves mess up.The other day I saw a woman put a package of skim milk to a tape in a cash register of a supermarket.

—May I ask why you buy this milk? I asked.

Because it's fat free? — the woman answered.

—And you know what they replace the fat? — I asked.

—Hmmm — she said, picked up the package and read the name of the second ingredient, which went after low-fat milk: "Corn syrup". She frowned. Then returned the package to the tape, and he was left among the rest of her purchases.

Obviously, the woman herself didn't even think to ask that question, she just took for granted the widespread belief that fat, which is an integral part of the human diet, should be avoided whenever possible.

However, why did she doubt it, if we have allowed food manufacturers, advertisers and researchers to think for us? In the 1970s no doubt that consumption of eggs increases the risk of heart attack, because of this we have been warned by nutritionists. And now the eggs have gained such popularity that many people began to keep their own laying hens. Similar examples of misconceptions and misinformation.

"Food resources in this country will never recover," said Harry Balzer (Harry Balzer), an analyst at NPD Group, who always speaks American consumers with a cheerful cynicism. "Never. Because as soon as something becomes popular, someone will find a reason why this food cannot be considered healthy."

Belzer used the most dangerous word: "healthy."

Everyone from doctors and nutritionists to culinary magazines say you need to eat healthy food. We by default believe cabbage salad healthy food, and the "big Mac" with fries is unhealthy.

I hasten to inform you: our favorite salads of cabbage "healthy" foods are not. His faith in the "healthy" foods we ourselves mess up. These salads are not "healthy", they are nutritious. If the salad is well prepared, can be delicious, and the cabbage, while she was growing up in the garden, probably, was healthy. But the cabbage is on your plate is not healthy, and give her such a definition means to fill an unnecessary fog, away from the main: cabbage is a huge amount of nutrients needed by the body. But it is not only in the word. If you eat too much cabbage, you will become bad. The word gives a clue where to start.

"Healthy" is an empty word," said Sakol Roxanne (Roxanne Sukol), a specialist in preventive medicine of the Cleveland clinic, which alone knows the science of nutrition ("In medical school we were not taught"). We Roxeanne was just at the grocery store. "Our food is not healthy. That we are healthy. And our food is nutritious. I pay attention to the choice of words. Words give the key to the tools that people need to understand what they are. All feel so confused".

In March last year, the FDA food and drug administration sent the company Kind (manufacturer of Nutter Butters) a letter which States that the use of the word "healthy" in the design of their packaging is an infringement (too much fat in the almonds). In response, the company has applied to the Department with the civil petition, demanding to reconsider the meaning of the word.

Cheese slices from Kraft cannot be called cheese, the label should read "cheese product". Pringles is not "chips", but rather "crisp". Products come in packages with the words "natural" or "all-natural" (I wonder what's the difference?), and none of that is particularly not followed.

The word we all know (we think): protein. Protein is useful, right? Protein gives you strong muscles, is associated with health benefits. That is why the "protein shakes" is a business worth billions of dollars. Cracklings are not associated with benefits and we believe them to be too fatty. But greaves, in fact, it is just fried strips of pig skin. Leather is one of the types of connective tissue, which is in all animals, and it is a little less than full, protein, which usually have a layer of fat. When these strips of skin are fried, most of the fat vytaplivaete, connective tissue inflated, and get a delicious, crunchy, salty skwarecki. Therefore, I recommend to take them with me to work to snack when you have the whole day on my feet.

The language used to describe food, flexible and versatile — no wonder that buyers become confused.

What "mechanically separated meat", a standard ingredient of sausages from poultry and meat became widespread thanks to the love of products with reduced contents of fat? "You know what it is? asked the owner of a grocery store. — Roughly speaking, they put the bird carcass in a giant centrifuge for drying salad leaves. Everything will stick to the walls in addition to meat (cartilage (protein!), nerves (thank you, I don't have their own), vessels, bones) scraped and put into the mixer". We are thinking about "mechanically separated meat" only when someone will add to it new words, like "filling of meat waste".

The label can say the product is "enriched," but it does not say that the ingredients used for making this product (e.g., bread) is first purified to such an extent that they have lost all its beneficial properties.

"Refined" is another dangerous word. In General, the "refined" so elegant and cultural in all that relates to appearance, manners or taste, and free from contamination. However, it's the way food manufacturers called a grain of wheat, which removed the embryo and shell did, in fact, one starch, in which no fiber, no oil, no iron, no all those vitamins that make wheat healthy and nutritious.

"This is not refined flour, and depleted," said Roxanne. Flour, deprived of its nutritious properties that make it valuable product, but reduce the shelf life.

And once the flour emasculated, it is necessary to "enrich". "Enriched". "Vitaminized". Great, right? To make the product rich in nutrients that are useful. Food manufacturers have added iron, which disappeared in the process of refining, but it is not enough."Refined flour — hence the lack of vitamin B and iron, says Roxanne. — So they added vitamins and iron. And what do they call it? Enriched and fortified flour. That's only until the nineties they were forgotten about folate and vitamin B9".

And who knows how all of these supplements (not to mention diglycerides and sulfates and the lack of fiber) will eventually affect metabolism, says Roxanne. So far, in her words, "it led only to diabetes and metabolic syndrome".

We will be healthy if we eat nutritious meals. Our food is either nutritious or not. We are either healthy or not. If we eat nutritious foods we can improve the current condition.

I'm not trying to judge your choice. If your soul needs a cheese product baked between slices devoid of nutrients bread, and a bowl of canned tomato soup (made from tomato paste, corn syrup and potassium chloride), fine. In my childhood it was one of my favorite dishes. Just know that you eat. Buy skim milk if you like it, just be aware of what and why goes in your body.

Because (in my subjective opinion) not fat is bad and stupid. And until there is more information and more understandable language for product descriptions to make a reasonable choice will be harder. published
