Tostado with vegetables for summer picnic

Ingredients (for 8 servings):

1 chopped bell pepper

Tostado 2 tbsp. Boiled beans

Recommended filling: guacamole, cilantro, salsa



How to cook:

Heat a large frying pan over medium heat with olive oil, add the onion and a pinch of salt. Cook for 3 minutes, then add the garlic, zucchini, bell peppers, corn, cumin, paprika, salt and pepper. Cook for about 8 minutes, stirring occasionally.

Preheat the oven to 200C. Evenly spread the mashed beans for Tostado, then a mixture of vegetables and 1-2 tablespoons grated cheese. Tostado Bake 5 minutes or until cheese melts.

Sprinkle with extra filling if desired.

Note: Frozen Tostado can be found in major supermarket chains, or use any other corn tortillas.
