- 250g applesauce
- 250g mashed sugar
- 475g sugar for syrup
- 1 protein
- 11g gelatin
- 160 ml of water
- 1 bag of vanillin

Preparation
- Mashed: bake apples in the oven, peel and grind in mashed potatoes.
- Add sugar and vanillin to the mashed potato. Leave it for a while. If you use finished applesauce, you can take less sugar.
- Put the pre-soaked gelatin on a slow fire. Stir it. Cook until completely dissolved.
- Make the syrup: sprinkle the sugar in the water and mix it. Cook the syrup on a medium heat until the mass becomes viscous. Add dissolved gelatin, take the pan off the fire, stir.
- Add half the protein to the applesauce.
- Blow the mass with a blender for 1 minute. Then add the second half of the protein and whip to form a lush mass.
- Add the gelatin syrup.
- Keep whipping so that the mass becomes white and airy.
- Put the marshmallow mass on the parchment in the form of small round cakes. It needs to be done very quickly.
- Leave the marshmallows dry for at least a day. Pour powdered sugar on the finished dessert.
