You can find natural marshmallows, which actually contain fruits and berries, only in specialized stores and sometimes for a lot of money. Therefore, the editors of the Site will tell you how to make marshmallows at home. Keep in mind: once you cook it, you will never return to the sweet chemical "dummies" that fill supermarket shelves.



How to make a marshmallow at home Marshmallow with a wonderful name "Forest berry", prepared according to this recipe, keeps its shape very well. At the same time, it is incredibly airy, moderately sweet and, of course, dizzyingly delicious! The main thing is to use only high-quality agar-agar . In addition, we will use applesauce, which contains a lot of pectin (thickener). But the combination of blueberry and raspberry puree will give a wonderful color and the same taste of a wild berry.

Ingredients for Marshmallow Mass
  • 65 g blueberry puree
  • 120 g applesauce
  • 65 g raspberry puree
  • 1 protein
  • 200 g sugar
  • vanilla sugar (to taste)


Ingredients for syrup
  • 400 g sugar
  • 150 ml of water
  • 9 g agar agar


Ingredients for deboning marshmallows
  • 200 g icing sugar
  • 50 g cornstarch


Preparation
  1. Before proceeding with the recipe, you need to prepare the fruit puree. Applesauce is quite easy to make: cut the apples, bake them, take out the pulp and grind it through a sieve. In the case of berries, we first interrupt them with a blender, and then we also grind them through a sieve. If you use frozen berries, then you must first defrost them .

  2. Having done all this, we prepare mashed potatoes for marshmallows. To do this, mix in a small saucepan 200 g of sugar, all mashed potatoes and vanilla. Place the saucepan on the stove and cook the puree until the sugar is completely dissolved, stirring constantly. When the mass boils, we continue to cook it for about 3 minutes. If the mixture is still thin, you can boil it longer until it thickens, be sure to continue stirring. Pour the finished mass into a bowl and let it cool completely.





  3. Next, beat the cooled puree with protein until fluffy in the bowl of the food processor.
  4. While the puree is beaten with protein, we knead the syrup in a saucepan. We combine water, agar-agar, 400 g of sugar, stir everything thoroughly and put the container on fire. As soon as the syrup boils, we begin to continuously stir it with a whisk, bringing the mass to a thick state. This process will take exactly 7 minutes. The finished syrup will run off the whisk in "strings".



  5. Since the syrup hardens very quickly, we rather pour it in a thin stream into the bowl of the combine, which in parallel whips the puree with protein. Having sent all the syrup to the pink fluffy mass, set the power of the combine to maximum and leave it to beat all the ingredients for 10 minutes. The finished mass will increase in volume and become very dense.



  6. Now you need to quickly put the mass in a pastry bag and deposit the marshmallows on a baking sheet, previously lined with parchment paper. By the way, we will be using a bag attachment called Closed Star. We leave the already formed marshmallows to harden and stabilize at room temperature for a day.



  7. Combine the halves of the frozen marshmallow, and then roll them in a mixture of powdered sugar and starch, shaking off excess powder at the end. Done!
