  3. Mix the second part of the flour with the remaining 10 g of yeast, pour a mixture of beet juice with citric acid, 1 tbsp. l. vegetable oil, add salt, sugar and coriander. Also mix the dough and cover with food film for 1 hour.



  4. When both tests are suitable, form a 5 cm thick sausage from each and cover it with food film. White dough was divided into 5 equal parts, and red - 10.
  5. Take one white piece of dough and 2 red. Roll them separately into cakes, then stack them tightly on top of each other in sequence: red, white, red. You will get the first sheet of marble dough. Roll it into a roulette.



  6. Wrap the first roll with the next red and white sheet, tightly gluing the edges like cakes. Repeat the action with the rest of the test, each new sheet must be rolled thinner than the previous one so that the edges converge. As a result, you will get an oval shape.



  7. Cover the dough with food film and let it brew for another 50 minutes. Before laying on the bowl, lubricate the workpiece with egg yolk. Bake in the oven at 180 degrees for 45-50 minutes
