Cutaba recipe with greens

  • 500g flour

  • 50g butter
  • 1 tsp salt

Preparation
  1. Soak in a bowl of flour through a sieve or a dud, so that it is enriched with oxygen and the dough comes out homogeneous.
  2. In a glass of hot water dissolve salt. Pour water and vegetable oil into the dough. While the mass is hot, mix it with a spoon. When the dough cools a little, knead it with your hands. It should be sufficiently dense and should not break.



  3. Transfer the dough to a flat surface, powdered with flour. Mix with your hands for 5 minutes until the dough is very smooth, elastic and elastic. Place it in a plastic bag and let it rest for 30 minutes.



  4. While the dough is resting, prepare the filling. Grate cheese on a large grater. If you have soft cheese, like feta, brynza, cottage cheese, then just break it with a fork.
  5. Add to the cheese finely chopped greens, black pepper and stir. If the cheese is salty enough, don’t add salt.



  6. Roll the dough into a sausage and divide it into 12 equal parts. Form them balls and cover them with food film, so that the dough does not wind up.



  7. Lubricate the working surface with vegetable oil and roll out the tortilla balls as thinly as possible.



  8. Put the filling on one half of the sheet and distribute it without reaching the edge. Cover the second half of the dough and gently push the air out of the cake. Press the edge of the kutab with your fingers and fill them well. To make the cake attractive, cut the edges with a figure knife or a pizza knife.



  9. Fry flatbread in a completely dry pan without oil for 2 minutes on each side on a medium heat until the appearance of golden tans.



  10. Roasted kutabs stack on a plate, grease with melted butter and cover with a lid. Let the dish cool a little and serve it to the table. Bon appetit!
