The ingredients
  • 2 tbsp
  • 4 tables of water (directly for cooking)
  • 2 tbsp vegetable oil
  • 500g champignon

  • 1 tbsp soy sauce
  • salt, pepper to taste


Preparation
  1. Sprinkle the cereal in a fine-mesh sieve and wash thoroughly several times. In a pot suitable in diameter to the sieve, boil some water. Place a barley sieve on top, cover the lid and leave on medium heat to steam for 20 minutes.
  2. In a thick-walled pan boil 4 tbsp of water, add a pinch of salt and 1 tbsp of vegetable oil. Sprinkle steamed barley, bring to a boil, turn down the fire and cook for 20 minutes.
  3. While the cereal is cooked, wash the mushrooms and cut them into quarters. Boil mushrooms in a small amount of water, throw it on the cord, and the mushroom broth strain.
  4. Peeled bulb finely cut, passseru in 1 tbsp. l. vegetable oil, add mushrooms and fry 5-7 minutes.
  5. Bring the mushroom broth to a boil again, pour soy sauce into it.
  6. During cooking, the water in the pot with cereal should boil. Put mushrooms toasted with onions, mix and pour the mushroom broth. Then the dish under the lid on a very low heat for another 40 minutes. This, by the way, can be done in the oven.


Pearl porridge with dried fruit



The ingredients
  • 200g pearl cereal
  • 10–12 dried apricots (apricots)
  • 10–12 dried fig fruits
  • 1 apple
  • butter, berries and honey to taste


Preparation
  1. Boil water in the pan, add pearl cereal to boiling water and boil until soft.
  2. Then drain the water, pour the barley with boiling water to remove the bitter taste, and drain the water.
  3. Rinse the dried fruit and cut it with straw. Peel and cut the apple with small cubes.
  4. Put the barley, dried fruit and apple in the pan. Pour a glass of boiling water and 20 minutes tome porridge on a small fire, stirring periodically.
  5. Remove the porridge from the fire and let it brew for 10-15 minutes.

The ingredients
  • 300g pearl cereal
  • 500g pumpkin
  • 2 red bulbs
  • 1 head of garlic
  • 150g parmesan
  • 30g fennel seeds
  • 2 bay leaves
  • 50ml olive oil
  • 2l broth
  • salt and pepper


Preparation
  1. Peel the pumpkin off the peel and cut the dice.
  2. Cut the red onion finely.
  3. Peel and chop the garlic.
  4. In a frying pan with thick walls, warm up the olive oil.
  5. Add fennel seeds and stir for a minute.
  6. Put bay leaf, garlic and onions in the pan. Roast it to a golden color.
  7. Add pumpkin to the pan, salty, peppery and roast over an average heat of 2 minutes. After that, add a dry barley and roast for another 1 minute.
  8. Pour 1 liter of heated broth and bring to a boil, stirring constantly.
  9. Reduce the fire, cover the lid and cook for another 10 minutes.
  10. When the cereal has absorbed all the liquid, add a little leftover broth. Do this until the barley is soft. This usually takes 30-40 minutes.
  11. Add the spices, grated parmesan and serve on the table. Bon appetit!


Pot with canned fish



Budget recipe, loved by many since Soviet times and invariably surprising bright taste contrast of ingredients.

The ingredients
  • 1 can of canned fish
  • 3 pickles
  • 80g pearl cereal
  • 600g potatoes
  • 1 carrot
  • 1 bulb
  • 1 tbsp salt
  • 1.5 liters of water

  • bay leaf and greens to taste


Preparation
  1. Steam pearl cereal in water at night or boil for 15 minutes.

The ingredients
  • 300g chicken meat
  • 2 carrots
  • 1 bulb
  • 2 potatoes
  • celery
  • 100g pearl cereal
  • 3 cloves of garlic

  • 20g butter or vegetable oil


Preparation
  1. Wash the meat and put in a deep pan, pour 3 liters of cold water, add pepper peas and bay leaves.
  2. Boil the chicken until ready and strain the broth. Separate the meat from the bones and cut it into pieces.
  3. In dishes with a thick bottom, paint butter and slightly roast finely chopped vegetables: onions, carrots, celery and garlic.
  4. After the vegetables become soft, put in a pan pre-soaked for 2-3 hours cereals and sliced with medium pieces of potatoes.
  5. Pour the strained broth and bring it to a boil.
  6. Add the sliced meat and continue cooking pearl soup over a slow heat for another 1 hour.
