A juicy, tender and rather hearty salad in my family is called “Carrot Candy”. All because of a little trick during cooking. Salad can be eaten not only for dinner, but also for lunch. It is not fatty, but nutritious and quenches hunger for the whole day.

And guests are not ashamed to put such a snack on the table. You just have to fantasize about the design.

The ingredients
  • 2 fresh carrots
  • 2-3 eggs
  • 2 tsp grain mustard
  • 3 tbsp thick yogurt or sour cream
  • 2 tsp lemon juice
  • 0.5 tsp sugar
  • 1 tbsp chopped dill greens
  • spices, salt, pepper to taste






Preparation
  1. Clean the carrots of the peel and wash under running water. Wrap it in food wrap and twist the edges like candy.
  2. Cook carrots in the microwave at a maximum power of 5 minutes. After a while, it should not be too soft, rather slightly undercooked or, as the Italians say, al dente.
  3. Carefully extract the root crop from under the film. Be careful not to get burned by hot steam!



  4. While the carrots are cooling, let them cook the eggs.
  5. In the meantime, get the gas station ready. Mix mustard, lemon juice, yogurt, salt, sugar and spices. Stir it well.



  6. Clean the boiled eggs and cut into 8 parts. Cut the carrots with rings. Carefully mix everything with the dressing so as not to separate the yolks from the proteins.
  7. You can eat the salad freshly prepared, or you can leave to soak, but not more than 1 hour. Before serving, sprinkle with spices, green dill or any other greens. Bon appetit!
