How to cook eggplant in a pan

Eggplants are summer-autumn vegetables, which have a lot of useful things. They contain fiber, soluble sugars, pectin, proteins, potassium, calcium, phosphorus, iron, magnesium, sodium, vitamins C, B1, B2, B5, PP.

If cooked properly, they will delight the eye and taste. For example, prepare them according to the following recipe.

  • 3 eggplant
  • 2 eggs
  • 2 bulbs
  • 4 tbsp vegetable oil
  • 1 tbsp. l. dry mushrooms (can be replaced with a mushroom cube)
  • salt, black pepper to taste






Preparation
  1. Peel the eggplant off the skin and cut them into long bars.



  2. Beat the eggs with salt and fill them with sliced eggplant. Stir and set aside for 2 hours.



  3. Chop the onions in cubes and roast in oil in a frying pan.



  4. Then in a new portion of vegetable oil roast the eggplant soaked with whipped eggs. How much to fry eggplant? Roast in batches until golden, five minutes each.



  5. Put all the eggplant in the pan again, add the toasted onions and spices. And another three minutes of carving vegetables under the closed lid. A delicious eggplant snack ready.
